Knowing that Singaporeans generally have an (ironic) disdain for overly sweet or sweet desserts, we have always reduced sugar in all our recipes (where it is possible) to allow more flavours to come through in our products.
 
Fresh lemons are cooked the traditional way and set with eggs.  No gelatine used.  The meringue has bare minimum sugar to meet our local palate.
 
Burst of fresh lemons is what you get in every bite!
